Starting from the fact that baking gluten free bread is always a challenge, this time, I decided to go for a homemade gluten free white loaf which I strongly believe as the simplest list of ingredients around. When I saw my friends devouring one slice after the other I realised: well, it should be good for real!

Ingredients for 1lb loaf tin:
- 250 grams of white gluten free flour
- 125 cl of warm water
- 1 spoon of quick yeast
- 1 spoon of xanthan gum
- Sunflower seeds (or any other seed you prefer)
The making:
Mix the quick yeast with the warm water into a large bowl. After melting the yeast, add the gluten free flour and the xanthan gum (to make the crust). Keep working the dough until you create a first ball.
Leave the dough till it raises double the size. Grease the bread tin with olive oil and put the dough inside the tin: work it accordingly to its shape. Add the sunflower seeds in this moment.
Wait for the dough to grow a little bit more once in the tin and in the meantime preheat the oven at a temperature of 150 degrees.
Put the tin in the oven for 40 minutes at a temperature of 170 degrees and use a wooden stick to check if the bread is cooked inside. Remember to put the oven on a ventilated mood for the last 10 minutes, it will help drying the crumble inside.
